Cooking with honey

CARDINIA Ranges Farmers’ Market this month will shine the spotlight on local honey cooking.
The market on Saturday 13 June at Pakenham Racecourse, Racecourse Road, from 8am until midday, will also have truckloads of new seasons fruit and vegetables that help to keep the winter chills at bay.
Regular stallholder, Paul Pynaker from Patchwork Apiary is well-known in Cardinia Shire for his knowledge and supply of local honey.
“Our honey tastes of local plants and tree blossoms; each honey has its own distinct colour and flavour.
“I will have plenty of honey for tastings so that people can decide which flavours they like,” said Mr Pynaker.
“Visitors to the market will be able to learn all about bees, how they make honey and there will be the opportunity to taste food that is dripping in golden nectar,” said farmers’ market co-ordinator Suzzanne Carter- Madej.
“There will be lots of opportunities to buy and taste some of the region’s best produce that will feature honey and spice including sizzling pork spare ribs, hot honey and spiced mulled apple juice.
“Haunted Gully Olive Oil will feature dukkah – A mixture of nuts and spices that is delicious when bread is dipped in olive oil and the spice mixture,” said Ms Carter- Madej.
Shoppers can take advantage of the savings on bulk deals on new seasons juicy sweet seedless mandarins and free range beef from Family Farmed Meats.
Broccoli, brussel sprouts, cabbages, cauliflowers, baby carrots and freshly cut salad greens will have top keeping qualities at this time of year.
Younger members of the family can take part in a free Little Bees cooking class where children can make honey crackles and apple and honey cordial.
A gold coin entry donation to this month’s market supports Lakeside Kindergarten’s play ground equipment project.
